  • ¼ teaspoon saffron threads
  • 2 tablespoons extra virgin olive oil
  • 1 pound assorted seafood (shrimp, mussels, calamari)
  • 2 bone-in chicken thighs, diced
  • 1 cup bell peppers, chopped
  • ½ cup frozen peas
  • 3 garlic cloves, minced
  • Salt to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced chicken thighs and cook until browned (5-7 minutes). Add minced garlic and sauté until fragrant.
  2. Stir in chopped bell peppers and peas; cook for another 3-4 minutes. Add rice and stir briefly to coat.
  3. Pour in warm chicken broth mixed with saffron and season lightly with salt; bring to a simmer without stirring.
  4. After about ten minutes, nestle seafood into the mixture and cover tightly; cook for another ten minutes until everything is tender.
  5. Let rest covered for 5 minutes before serving hot.
