- 8–10 cloves roasted garlic
- 1 cup sharp cheddar cheese (grated)
- 4 cups low-sodium vegetable broth
- 1/2 cup heavy cream or whole milk
- 2 tablespoons extra virgin olive oil
Instructions
- Preheat the oven to 400°F (200°C). Drizzle garlic cloves with olive oil, wrap in foil, and roast for about 30 minutes until golden brown.
- In a large pot over medium heat, add olive oil and sauté cauliflower florets for about 5 minutes until slightly softened.
- Add vegetable broth to cover the cauliflower by an inch. Bring to a simmer, then reduce heat and cook uncovered for about 15 minutes until tender.
