  • 2 stalks celery, diced

  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 tsp dried thyme
  • 1 bay leaf
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  2. In a large pot, heat olive oil over medium heat. Add onions and sauté until translucent (about 5 minutes).
  3. Stir in carrots and celery along with minced garlic; cook until softened (3-4 minutes).
  4. Add rinsed lentils and diced tomatoes (with juice), stirring well.
  5. Pour in vegetable broth, thyme, bay leaf, salt, and pepper; bring to a boil then reduce heat to simmer for 30-40 minutes.
  6. Check lentils for tenderness before serving hot. Adjust seasoning as needed.
