- 4 cups fresh carrots, diced
- 1 tablespoon fresh ginger, grated
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups low-sodium vegetable broth
- 1 cup coconut milk
- 2 tablespoons olive oil
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Sauté chopped onions until translucent, then add minced garlic and grated ginger.
- Stir in diced carrots and cook for about 5 minutes until they soften slightly.
- Pour in vegetable broth to cover the vegetables by an inch. Bring to a simmer and cook until the carrots are tender (about 15-20 minutes).
- Remove from heat and let cool slightly before blending until smooth using an immersion blender or regular blender.
- Stir in coconut milk, season with salt, pepper, and lime juice. Warm through on low heat without boiling.
- Serve hot, garnished with fresh herbs or a drizzle of coconut milk.
