- 1 cup brown or green lentils
- 2 medium carrots, diced
- 1 medium yellow onion, chopped
- 3 garlic cloves, minced
- 2 celery stalks, diced
- 4 cups low-sodium vegetable broth
- 1 can (14.5 oz) diced tomatoes
- 1 tsp ground cumin
- 1 tsp dried thyme
- 2 tbsp olive oil
Instructions
- Dice the onion, carrots, celery, and mince the garlic.
- In a large pot over medium heat, add olive oil and sauté the onions for about 5 minutes until translucent. Stir in minced garlic and cook until fragrant.
- Add rinsed lentils, diced tomatoes, and vegetable broth to the pot. Bring to a gentle boil.
- Season with cumin, thyme, salt, and pepper to taste. Optionally add chili flakes for spice.
- Reduce heat to low and simmer for 30–40 minutes until lentils are tender.
- For a creamier texture, blend a portion of the soup using an immersion blender (optional).
- Adjust seasoning as needed before serving.
