Ingredients

  • 1 cup brown or green lentils
  • 2 medium carrots, diced
  • 1 medium yellow onion, chopped
  • 3 garlic cloves, minced
  • 2 celery stalks, diced
  • 4 cups low-sodium vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp ground cumin
  • 1 tsp dried thyme
  • 2 tbsp olive oil

Instructions

  1. Dice the onion, carrots, celery, and mince the garlic.
  2. In a large pot over medium heat, add olive oil and sauté the onions for about 5 minutes until translucent. Stir in minced garlic and cook until fragrant.
  3. Add rinsed lentils, diced tomatoes, and vegetable broth to the pot. Bring to a gentle boil.
  4. Season with cumin, thyme, salt, and pepper to taste. Optionally add chili flakes for spice.
  5. Reduce heat to low and simmer for 30–40 minutes until lentils are tender.
  6. For a creamier texture, blend a portion of the soup using an immersion blender (optional).
  7. Adjust seasoning as needed before serving.
