- 1 can (15 oz) black beans, drained and rinsed
- 1 cup cooked quinoa
- 1 medium carrot, grated
- 1 small sweet onion, chopped
- 2 cloves garlic, minced
- 2 tsp chili powder
- 1/2 cup whole wheat breadcrumbs
- 1 large egg (or 1 flax egg for vegan option)
Instructions
- Rinse black beans and mash them in a bowl until slightly chunky.
- In a pot, combine quinoa and water (1 cup quinoa to 2 cups water). Bring to a boil, then simmer for 15 minutes.
- Sauté chopped onion and grated carrot in olive oil over medium heat for about 5 minutes until softened.
- In the mashed black beans bowl, mix in the cooked quinoa, sautéed vegetables, garlic, chili powder, breadcrumbs, and egg/flax egg.
- Shape mixture into patties about one inch thick and chill briefly.
- Preheat grill or skillet over medium-high heat. Cook each patty for 4-5 minutes on each side until golden brown.
