  • 35 lbs chuck roast
  • 1 packet ranch dressing mix
  • 1 packet au jus gravy mix
  • 6 whole pepperoncini peppers
  • 12 cups beef broth
  • 4 large carrots (cut into chunks)
  • 4 medium Yukon Gold or red potatoes (quartered)

Instructions

  1. Gather and prepare all ingredients, chopping carrots and potatoes as needed.
  2. Season the chuck roast generously with salt and pepper on all sides.
  3. Place the seasoned roast in the slow cooker and arrange carrots and potatoes around it.
  4. Sprinkle ranch dressing mix and au jus gravy mix over the roast.
  5. Add beef broth until it covers about halfway up the meat; place whole pepperoncini peppers on top.
  6. Cook on low for approximately 8 hours or until fork-tender.
