- 4 bone-in chicken thighs
- 2 cups fresh apricots (sliced)
- 1 large yellow onion (chopped)
- 3 garlic cloves (minced)
- 3 tablespoons extra virgin olive oil
- 2 cinnamon sticks
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 2 cups low-sodium chicken broth
- Fresh cilantro or parsley (for garnish)
Instructions
- Prepare your ingredients by chopping onions and mincing garlic.
- In a large pot over medium-high heat, heat olive oil and sear chicken thighs until browned, about 5 minutes per side. Remove and set aside.
- In the same pot, add chopped onions and cook for about 5 minutes until soft. Add minced garlic and sauté for about 1 minute until fragrant.
- Stir in cinnamon sticks, cumin, coriander, and chicken broth. Bring to a simmer while scraping any brown bits from the pot.
- Return the seared chicken to the pot along with sliced apricots. Cover tightly and simmer gently for 30 minutes until the chicken is tender.
- Remove from heat, garnish with fresh herbs, and serve over couscous or rice.
