Ingredients

  • 4 bone-in chicken thighs
  • 2 cups fresh apricots (sliced)
  • 1 large yellow onion (chopped)
  • 3 garlic cloves (minced)
  • 3 tablespoons extra virgin olive oil
  • 2 cinnamon sticks
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 2 cups low-sodium chicken broth
  • Fresh cilantro or parsley (for garnish)

Instructions

  1. Prepare your ingredients by chopping onions and mincing garlic.
  2. In a large pot over medium-high heat, heat olive oil and sear chicken thighs until browned, about 5 minutes per side. Remove and set aside.
  3. In the same pot, add chopped onions and cook for about 5 minutes until soft. Add minced garlic and sauté for about 1 minute until fragrant.
  4. Stir in cinnamon sticks, cumin, coriander, and chicken broth. Bring to a simmer while scraping any brown bits from the pot.
  5. Return the seared chicken to the pot along with sliced apricots. Cover tightly and simmer gently for 30 minutes until the chicken is tender.
  6. Remove from heat, garnish with fresh herbs, and serve over couscous or rice.
