Ingredients

  • 1 cup canned chickpeas, drained and rinsed
  • 1 cup tri-color quinoa
  • 1 bell pepper, chopped
  • 1/2 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • Fresh herbs (parsley or cilantro), chopped
  • Juice of 1 lemon
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • salt to taste

Instructions

  1. Rinse quinoa under cold water until clear. Cook in 2 cups of water over medium heat for about 15 minutes until fluffy.
  2. While quinoa cooks, chop bell pepper, cucumber, cherry tomatoes, and red onion.
  3. In a small bowl, whisk together olive oil, lemon juice, cumin, paprika, and salt.
  4. In a large bowl, combine cooked quinoa with chickpeas, chopped veggies, fresh herbs, and dressing. Mix gently to coat.
  5. Taste and adjust seasoning if needed. Serve in bowls or dishes.
