- 2 large sweet potatoes, peeled and cubed
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1 cup low-sodium chicken broth
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
