This easy-to-follow recipe delivers an explosion of flavor, making it perfect for both family dinners and entertaining guests. With just a handful of simple ingredients, you can create a mouthwatering meal that will transport your taste buds to the heart of Indian cuisine. Best served with fluffy basmati rice or warm naan, this Chicken Curry promises to be a hit at your table. Ready in about 30 minutes, it’s an ideal choice for busy weeknights or special occasions alike.

Ingredients

Scale
  • 1 lb boneless chicken thighs (or breasts)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 2 tablespoons curry powder
  • 1 can (14 oz) canned tomatoes, chopped
  • 1 can (14 oz) coconut milk
  • Salt and pepper to taste
  • Cooking oil

Instructions

  1. Prepare your ingredients by chopping the onion, mincing the garlic, grating the ginger, and cutting the chicken into bite-sized pieces.
  2. Heat oil in a large skillet over medium heat. Sauté onions until translucent (about 5 minutes), then add garlic and ginger; cook until fragrant (about 1 minute).
  3. Add chicken pieces to the skillet and cook until browned on all sides (approximately 6 minutes).
  4. Stir in curry powder along with salt and pepper; cook for another 2 minutes.
  5. Pour in canned tomatoes and coconut milk; stir well and bring to a gentle simmer on low heat.
  6. Let it simmer for about 15 minutes until the sauce thickens and chicken is cooked through (internal temperature should reach at least 165°F/74°C). Adjust seasoning if needed.
