  • 34 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves fresh garlic, minced
  • 8 corn tortillas
  • 2 cups enchilada sauce (store-bought or homemade)
  • 1.5 cups shredded cheese (cheddar and Monterey Jack blend)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a pot over medium heat, sauté minced garlic in olive oil until fragrant. Add chicken breasts, season with salt and pepper, and cook until no longer pink (15-20 minutes). Shred the cooked chicken.
  3. In a mixing bowl, combine shredded chicken with half of the enchilada sauce and half of the cheese.
  4. Fill each tortilla with about two tablespoons of the chicken mixture, roll tightly, and place seam-side down in the baking dish.
  5. Pour remaining enchilada sauce over the tortillas and top with remaining cheese.
