  • 1 cup bell peppers (mixed colors)
  • 1 medium onion
  • 3 cloves garlic
  • 1 tsp cumin
  • 1 tsp chili powder
  • 2 tbsp olive oil
  • 2 cups cooked rice

Instructions

  1. Chop the chicken into bite-sized pieces and slice the bell peppers and onion thinly.
  2. Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken pieces and cook until golden brown and internal temperature reaches 165°F (75°C), about 5-7 minutes.
  3. Add onions, bell peppers, and minced garlic to the skillet. Sauté until veggies soften for about 3-4 minutes.
  4. Sprinkle cumin and chili powder over the mixture; stir well for one more minute to enhance flavors.
  5. Cook rice according to package directions while sautéing the chicken mixture. Fluff with a fork when done.
  6. Assemble bowls by placing a scoop of warm rice at the base and topping it with the chicken and veggie mixture. Garnish with desired toppings.
