Instructions
- Chop the chicken into bite-sized pieces and slice the bell peppers and onion thinly.
- Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken pieces and cook until golden brown and internal temperature reaches 165°F (75°C), about 5-7 minutes.
- Add onions, bell peppers, and minced garlic to the skillet. Sauté until veggies soften for about 3-4 minutes.
- Sprinkle cumin and chili powder over the mixture; stir well for one more minute to enhance flavors.
- Cook rice according to package directions while sautéing the chicken mixture. Fluff with a fork when done.
