Description

Lentil Soup with Cumin and Lemon is a hearty, nutritious dish that combines earthy lentils with the bright flavors of lemon and aromatic cumin. Perfect for cozy evenings or meal prep!

Ingredients

Scale
  • 1 cup green or brown lentils
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 1 tablespoon cumin seeds
  • Juice of 1 lemon
  • 4 cups low-sodium vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add olive oil. Once shimmering, sauté chopped onions and minced garlic until translucent (about 3-4 minutes).
  2. Add diced carrots and toasted cumin seeds; sauté for an additional 2-3 minutes until fragrant.
  3. Stir in rinsed lentils and vegetable broth, bringing to a gentle boil. Reduce heat and simmer for 25-30 minutes or until lentils are tender.
  4. Finish by adding freshly squeezed lemon juice along with salt and pepper to taste. Let it sit for about 5 minutes before serving.
  5. Serve warm, garnished with fresh parsley or an extra drizzle of olive oil.
