  • 12 jumbo pasta shells
  • 3 boneless, skinless chicken breasts (about 1 lb), diced

  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 4 tbsp butter
  • 2 cups fresh spinach (optional)
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the jumbo pasta shells in salted boiling water until al dente. Drain and set aside to cool.
  2. In a skillet over medium heat, melt 2 tablespoons of butter. Add minced garlic and sauté until fragrant. Add diced chicken seasoned with salt and pepper; cook until golden brown.
  3. Stir in heavy cream and Italian seasoning, simmering gently until thickened (about 5 minutes). Mix in grated Parmesan until melted.
  4. If using spinach, fold it into the sauce mixture until wilted.
  5. Stuff cooked shells generously with the filling and place them upright in a greased baking dish.
  6. Pour remaining Alfredo sauce over filled shells and sprinkle extra cheese on top. Bake at 350°F for 20-25 minutes until bubbly and golden.
