  • 1 lb lean ground beef
  • 6 large flour tortillas
  • 2 cups shredded cheddar and Monterey Jack cheese
  • 2 cups enchilada sauce (store-bought or homemade)
  • 1 medium onion, chopped
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 cup sour cream (for topping)
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, heat olive oil and sauté the chopped onion until translucent (4-5 minutes).
  3. Add ground beef to the skillet with onions; cook until browned. Drain excess fat and season with cumin and chili powder.
  4. Warm flour tortillas in a pan or microwave until pliable.
  5. Assemble enchiladas by placing a scoop of beef mixture and a sprinkle of cheese inside each tortilla; roll tightly.
  6. Place rolled enchiladas seam-side down in a baking dish. Pour enchilada sauce over them and top with remaining cheese.
  7. Bake for about 20 minutes until bubbly and golden. Serve hot with sour cream.
