- 1 can (15 oz) black beans, rinsed and drained
- 1 cup frozen corn
- 4 cups low-sodium chicken broth
- 8 oz cream cheese, cubed
- Tortilla chips or tortillas for serving
Instructions
- In a large pot, heat a splash of olive oil over medium heat. Sauté chopped onion and minced garlic until translucent.
- Add ground turkey or beef, cooking until browned (about 5-7 minutes). Break up lumps as it cooks.
