  • 34 boneless, skinless chicken breasts (1.5 lbs)
  • 1/2 cup chipotle ranch dressing
  • 1 cup bell peppers, chopped (mixed colors)
  • 1/2 cup red onion, finely chopped
  • 4 large flour tortillas
  • 1 cup lettuce (romaine or iceberg), shredded
  • 1 cup shredded cheddar or Monterey Jack cheese
  • Juice of 1 lime
  • 2 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Marinate the chicken in a bowl with olive oil, chipotle ranch dressing, salt, and pepper for at least 30 minutes.
  2. While marinating, chop bell peppers and red onion.
  3. Preheat grill to medium-high heat. Grill marinated chicken for about 6-7 minutes per side until cooked through (internal temp of 165°F).
  4. In a skillet over medium heat, sauté bell peppers and onions with olive oil until softened (about 5-6 minutes).
  5. Lay out tortillas and layer grilled chicken slices, sautéed veggies, shredded cheese, lettuce, and lime juice. Roll tightly.
  6. Slice burritos in half and serve with lime wedges.
