- 3–4 boneless, skinless chicken breasts (1.5 lbs)
- 1/2 cup chipotle ranch dressing
- 1 cup bell peppers, chopped (mixed colors)
- 1/2 cup red onion, finely chopped
- 4 large flour tortillas
- 1 cup lettuce (romaine or iceberg), shredded
- 1 cup shredded cheddar or Monterey Jack cheese
- Juice of 1 lime
- 2 tsp olive oil
- Salt and pepper to taste
Instructions
- Marinate the chicken in a bowl with olive oil, chipotle ranch dressing, salt, and pepper for at least 30 minutes.
- While marinating, chop bell peppers and red onion.
- Preheat grill to medium-high heat. Grill marinated chicken for about 6-7 minutes per side until cooked through (internal temp of 165°F).
- In a skillet over medium heat, sauté bell peppers and onions with olive oil until softened (about 5-6 minutes).
- Lay out tortillas and layer grilled chicken slices, sautéed veggies, shredded cheese, lettuce, and lime juice. Roll tightly.
- Slice burritos in half and serve with lime wedges.
