- 4 medium bell peppers (red, yellow, or green)
- 1 cup cooked jasmine rice
- 1 lb lean ground beef or turkey
- 1 cup halal mozzarella or cheddar cheese, divided
- 2 tsp Italian seasoning
- 1 tsp garlic powder
- 1 cup tomato sauce
Instructions
- Preheat the oven to 375°F (190°C). Prepare peppers by slicing off the tops and removing seeds.
- Cook rice according to package directions; set aside.
- In a skillet over medium heat, brown the ground meat for 5-7 minutes until fully cooked. Stir in garlic powder and Italian seasoning.
- In a bowl, combine cooked rice, sautéed meat, tomato sauce, and half of the cheese.
- Stuff each pepper with the mixture and place them upright in a baking dish. Top with remaining cheese and caps.
- Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes until cheese is bubbly.
